Toon's Special Tuna Salad Sandwich
Take one can of chunk tuna in water (not oil) -- I like to use ordinary chunk light, but it works as well with albacore. Add, to taste:
mayonnaise
lemon juice
garlic powder
onion powder
basil
oregano
parsley

Mix well. Spread onto toasted white bread, whole wheat bread, or baguette. Top with tomato slices and lettuce if desired.

Toon's Avocadwich
Toast four slices of white bread. While bread is toasting, cut one ripe avocado and one ripe tomato (make sure it's a firm one!) into very thin slices.
Spread toast with herb mayonnaise (see artichoke recipe for how to make, or improvise your own). Arrange slices of avocado and tomato on two slices of toast in an aesthetically pleasing pattern. Top with remaining two slices. Cut sandwiches in halves or quarters for decreased messiness.

Toon's Celebrated CBLT
Take two slices of white or whole wheat bread. Toast lightly and spread with mayonnaise. Add a layer of cheese slices to one piece of toast. (I usually use American for this particular thing, but take your pick.)
On the other piece of toast, layer in the following order:
Bac-Os (Or any brand of artificial bacon bits. Or heck, real bacon bits if you feel like it.)
Tomato slices
Lettuce
If you have a toaster oven, put the toast-with-cheese back in until the cheese is melted, and top the other slice with it at once, pressing firmly down. Cut sandwich in quarters and put a toothpick through each quarter to hold it together.

Non-Boring Cucumber Sandwich (Look, Ma, No Tomatoes!)
For this you need a good, solid, flavorful bread. Challah is good, as is any good seven-grain bread or even just a nice hearty whole wheat.
Slice bread thickly and spread generously with aioli (or herb mayonnaise, but aioli is better). Layer thin slices of cucumber over this. If desired, add very, very thin slices of avocado, or your favorite fancy lettuce. Top with another slice of aioli'd bread, or eat open-faced.

On rye or pumpernickel or herb bread:
Dijonnaise (or mayonnaise mixed with a good brown mustard)
one or two very thin slices of tomato, and/or onion, and/or sweet pepper
a scattering of chopped walnuts and/or cashews
a slice of wood-cured gouda cheese

OR

On white or rye bread:
a little butter
a layer of thinly-sliced apple
a scattering of chopped walnuts and/or cashews and/or golden raisins
a slice of cheddar or muenster cheese

Put in toaster oven (or under broiler) until cheese melts and bubbles.
