Easy Quick Raspberry Garlic Chicken Take one chicken, cut up into quarters. Spray with a little olive oil, sprinkle with a little onion and garlic powder. Bake at 350 for about twenty minutes while you prepare the sauce. Take one small jar of raspberry preserves (the all-fruit, no-sugar-added variety works best). Heat in saucepan. Add large amount of minced garlic, some red wine, a touch of vinegar (I like red wine vinegar for this, but balsamic works nicely too) and a touch of soy sauce. Simmer for a little while. Spoon this sauce over the chicken and bake until done (something like another 40 minutes). Serve hot.
