Potato-Parsnip Bake
Ingredients: Peel potates and parsnips. Use a vegetable peeler or a very sharp knife to slice the potatoes and parsnips into 1/8th-inch slices. Spray a casserole dish with vegetable oil. Cover the bottom with a thin layer of potato slices, scatter some parsnip slices over it, sprinkle with minced onion, minced garlic, paprika, salt and pepper. Spray with vegetable oil. Add another layer of potato slices, and repeat until done - usually three to four layers. (Note: the top layer should be below the top of the dish.) Add dried parsley to the spices on the top layer, and spray with extra oil. Cover the top of the dish with aluminum foil and seal the edges. Bake at 350o - 400o for about an hour, or until tender. Serve hot as a side dish.
