Bread Kugel Cut bread into half-inch cubes, enough to halfway fill a medium-large baking pan. Spray with cooking oil and put in hot oven until toasted brown, stirring and re-spraying every so often. Dump toasted bread cubes into a large mixing bowl. Pour one cup of instant chicken- or onion-flavored broth over cubes and mix to soften. Add three eggs and a little coffee rich (or milk). Season with parsley, salt, nutmeg, pepper, and whatever other seasonings you like. Chop one large onion and sautee until brown. Add to the bread cubes. Slice one package of mushrooms and two or three stalks of celery, sautee, and add. If desired, add roasted garlic, sliced water chestnuts, and/or sliced bamboo shoots. Mix well. Pour mixture into baking pan. Sprinkle the top with paprika, parsley, and/or poultry seasoning. Bake until brown. Serve hot or room-temperature as a side dish to meat or poultry.
