Happy Bean Soup

Ingredients:
1 16-oz can vegetarian baked beans
Chicken or onion flavored soup mix (or a combination of both)
2/3 cup sun-dried tomatoes, cut into small pieces
1 tsp brown mustard
2 tbsp brown sugar
1 tbsp soy sauce
1 handful dried onion flakes
2 16-oz cans black beans
1/2 tsp cumin
ginger and black pepper to taste
Dash lemon juice

Put baked beans in deep saucepan. Add one can of water and one can of hot water with soup mix. Bring to boil while adding dried tomatoes, mustard, brown sugar, and soy sauce. Stir well. Lower heat and simmer for ten minutes, stirring occasionally.

Add handful (approximately 1/3 cup) dried onion flakes. Add black beans, cumin, ginger and black pepper. Simmer for another fifteen minutes, stirring occasionally.

Add lemon juice and stir. Serve hot in individual bowls, garnished with dried parsley and basil.
