Banana Cream Pie

Ingredients:
1 ready-made pie crust
2-3 ripe bananas, sliced

Filling:
1/2 cup sugar
1/4 cup cornstarch
1/8 tsp salt
2 3/4 cups milk
2 egg yolks beaten lightly
2 tbsp unsalted butter
1 1/5 tsp vanilla

Prepare pie crust according to instructions.

In a heavy saucepan off heat, whisk together sugar, cornstarch and salt. Gradually whisk in milk and beat in egg yolks, combining the mixture well. Put pan over low to moderate heat and bring mixture to a boil, stirring constantly with whisk. Boil for one minute, whisking constantly. Remove from heat and stir in butter and vanilla.

Arrange layer of sliced bananas at bottom of pie crust. Pour a layer of filling over bananas. Repeat layers of banana slices and filling until pie crust is full, ending with layer of filling. If desired, arrange a few banana slices in the center of the pie. Chill and serve.
